The coffee on Oahu was introduced first as a decorative shrubs. People found that the coffee trees adapt to the weather and the vocanic soil very well in Hawaii, and the unique conditions here produce coffees that have a very distinctive taste.The Waialua Coffee Fields are located in the hills above the world famous North Shore of Oahu. There are about 180 acres for now with more being planted currently.. The coffee mill is located down the hill in sleepy little Waialua Town. The mill site is located on the grounds of the former Waialua Sugar Mill. The Sugar Mill was opened in 1896 and finally closed its doors in 1996. The Mill played a very significant role in the history and development of the North Shore community and it still holds a special place in the hearts of the local residents.

Nowadays the sugar is gone but the "Old Sugar Mill " site is still a vital part of the community. There is the vibrant local Waialua Farmer's Market with individual farmers selling "Waialua grown" produce that was grown on former sugar lands.There is the Waialua Coffee and Cacao Mill where Dole does their processing of the coffee and chocolate.

Our Island X Hawaii Store is adjacent to the Coffee and Cacao Mill and so we offer free coffee and chocolate samples and free mini tours of the site to visitors from all over the world. You can buy the coffee and chocolate here as well as many other locally produced items such as Hawaii's Special Papaya Seed Salad Dressing, Waialua Soda Works Soda, and Mary's North Shore Natural Snacks.

With the Coffee/Chocolate Mill literally just out of our back door, Island X Hawaii offers mini mill-site tours.

From January the flowers start to bloom. They will keep blooming from time to time all year round. When blooming the air is lingered with sweet, jasmine like scent. The coffee flowers will last for couple of days and then fade away. Followed the tiny green beans, then grow bigger in size. After about 6 months they'll turn red which is called "Cherries". Just like all the ripen fruits, the red skin around the seed tastes sweet. If you are happen to be in the neighborhood around this time, please stop by and taste the coffee fruit.

Island X Hawaii currently offers 100% Waialua coffee with different processing methods.

Water Washed Process Waialua Coffee These coffee beans are picked at the peak of ripeness.These "cherries" (red ripe coffee fruit) are washed and soaked in the water for fermentation then dried in the sun on raised mesh drying racks. During fermentation rejects and unripe beans will float to the surface where they can be removed and discarded. This system allows for higher quality control resulting is a cleaner more refined tasting coffee.

Natural Dry Process Waialua Coffee These coffee beans are not picked when they are ripe but are left on the tree until they become black. Fermentation takes place naturally on the tree as the coffee is fermented in it's own skin.These over rippened beans are called raisins and after they are collected, the beans are then spread on the ground to dry.This process has a significant effect on the character and taste of the coffee resulting is more lively tasting and fuller bodied coffee.

Peaberry Select Waialua Coffee This coffee is the Water Wash Process coffee. In the regular coffee beans there are only 3~4% round coffee beans, and those are the peaberries. Island X Hawaii occasionally offers Peaberry and Peaberry Select grades. These coffee is extremely rare. Please check "our Store to see the availability.
