Waialua Cacao is grown just down the River side near the Waialua Elementary School. It's considered the most expensive, the rarest chocolate in the world. After the cacao pods are harvest, they were brought to the Old Sugar Mill to do the processing. They were chopped open and scooped out the seeds (about 40 seeds per pod), put in the wine barrels then covered with the banana leaves and coffee sacks then left in the sun for a week for the fermentation. Then the fermented cacao will be spread on the mesh trays to dry in the sun. Then they were made to the chocolate bars. Due to the volcano soil and the farther distance from the equator, the Waialua Chocolate tastes fruity and winy taste.
